Chocolate Cake
Makes 12-16 servings using cocoa, flour and granulated sugar.
A rich, moist chocolate layer cake made with a combination of butter for flavor and vegetable oil for a tender crumb, which uses strong brewed coffee to deepen the chocolate notes; it bakes into a tender, never-dry cake ideal for celebrations.
- Serves 12-16
- Cuisine: American
Ingredients
- 270 g (2 1/4 cups) unbleached all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp table salt
- 65 g (3/4 cup) unsweetened cocoa, Dutch-process or natural
- 355 g (1 3/4 cups) granulated sugar
- 115 g (8 tbsp) unsalted butter, at room temperature
- 80 ml (1/3 cup) vegetable oil
- 2 tsp pure vanilla extract
- 240 ml (1 cup) milk
- 120 ml (1/2 cup) brewed coffee or water
- 4 large eggs
- 1 batch of Super-Simple Chocolate Frosting*
Method
- Preheat the oven to 180°C (350°F). Lightly grease and flour your choice of pans: one 23 x 33 cm (9 x 13 in) pan, two 23 cm (9 in) round pans, or three 20 cm (8 in) round pans. (To make a four-layer cake, use two 23 cm (9 in) round pans; the layers will each be split in half.)
- Sift together the flour, baking powder, baking soda, salt, cocoa, and sugar into a large mixing bowl.
- Add the butter and mix at low speed for 1 minute. With the mixer running, add the oil and continue mixing until the mixture looks sandy, about 30 seconds more.
- In a large measuring cup, combine the vanilla with the milk and coffee (or water), and add all at once to the dry ingredients. Mix for 1 minute at low speed, stop and scrape the sides and bottom of the bowl, then mix for 30 seconds more.
- Add the eggs one at a time, beating well at medium-high speed between additions.
- Scrape the sides and bottom of the mixing bowl, and mix for 30 seconds more. The batter will be thin.
- Transfer the batter to the prepared pan(s) of your choice. Smooth out the tops of the layers with an offset spatula.
- Bake for 34 minutes for a 23 x 33 cm (9 x 13 in) pan, 28 to 30 minutes for 23 cm (9 in) layers, and 24 to 26 minutes for 20 cm (8 in) layers.
- The cake is done when the top springs back when very lightly touched in the center, and the edges just begin to pull away from the edge of the pan. A toothpick or paring knife inserted in the center will come out clean.
- Remove the cake from the oven and let cool completely in the pan(s) on a rack. Cake layers can be wrapped and frozen for up to a month before frosting.
- Frost the 23 x 33 cm (9 x 13 in) cake directly in the pan once cool. For the layer cakes, turn them out of the pan once cool. To make a 4-layer cake, split the 23 cm (9 in) rounds in half horizontally with a large serrated knife. (Leave the three 20 cm (8 in) layers whole.) Frost the top of one layer, then top with the second layer and repeat until all layers are used. Finally, frost the top and sides of the cake. See our blog post, How to assemble and frost a layer cake, for details.
- Refrigerate the cake for about an hour to help the frosting set up and make slicing easier. Serve slices of cake cold or at room temperature.
- Refrigerate any leftovers, well wrapped, for a day or so; freeze for longer storage.
Questions
Can I use water instead of coffee?
Yes. The recipe takes 120 ml of brewed coffee or water; coffee deepens the chocolate flavour.
Which pans can I use, and how long do they bake?
At 180°C (350°F): about 34 minutes for one 23 x 33 cm (9 x 13 in) pan, 28 to 30 minutes for two 23 cm (9 in) rounds, and 24 to 26 minutes for three 20 cm (8 in) rounds.
Can I make the cake ahead?
Yes. Cooled, unfrosted layers can be wrapped and frozen for up to a month before frosting.
How should I store the cake?
Refrigerate leftovers, well wrapped, for a day or so; freeze for longer storage.
Is this chocolate cake halal?
The recipe is pork-free. It does contain alcohol through the vanilla extract, which is usually made with alcohol: use a halal-certified or alcohol-free vanilla. It is not halal-certified: also check the frosting ingredients and the cocoa and butter for halal certification.
