Ingredients

  • 200 g Jasmine Rice
  • 2 spring onions, diced
  • 1 medium carrot, diced
  • 220 g chicken char siu, diced
  • 200 g raw prawns
  • 3 large eggs
  • 60 g peas
  • 3 tbsp vegetable oil

Seasoning

  • 1/4 tsp white pepper
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce

Method

  1. Cook the rice according to pack instructions. See Tips.
  2. Mix white pepper, soya and oyster sauce. Set aside.
  3. Separate 2 eggs and place the yolks in with the rice and the whites in another bowl. Crack the remaining egg into the bowl containing the egg whites.
  4. Mix the 2 yolks with the rice until they are all covered in the golden yolks.
  5. Beat the egg whites and remaining egg in a bowl.
  6. Heat a wok to medium low heat, then add 1 Tbsp of oil and scramble the eggs. As soon as it sets, transfer to a bowl.
  7. Using the same wok, bring heat to medium.
  8. Add the rest of the veg oil and sauté spring onions and carrots for 2 mins before adding the prawns.
  9. Stir fry the prawns till they turn pink, tip in the chicken char siu and stir-fry for 1 minute. Push ingredients to the side.
  10. Bring heat to high. Add the cooked rice to the centre of wok. Break up clumps of rice and let it sit for 1 minute. Stir fry for another 30 seconds.
  11. Add eggs and peas. Continue to break up the clumps and mix everything together well.
  12. Add light soy, oyster and white pepper mix. Stir fry and mix well into the rice. Cook till prawns are cooked through and rice is piping hot. Transfer the rice to a serving bowl. Enjoy!

Questions

Is this yang chow fried rice halal?

This version is pork-free: it uses chicken char siu (Cantonese-style barbecued chicken). It is not halal-certified: use halal-certified chicken, and check that the oyster sauce, soy sauce and any ready-made barbecue sauce carry halal certification, since some sauces contain alcohol.

Should I use freshly cooked rice?

Cooked, cooled rice fries best because it is drier and does not clump; spread freshly cooked rice out to cool and steam off first. The recipe also coats the rice in egg yolks before frying.

How do I store leftover fried rice?

Cool it quickly, refrigerate it within an hour, eat it within a day, and reheat it until piping hot all the way through.

Can I leave out the prawns?

Yes. Add more chicken char siu or vegetables instead, and skip the prawn stage in step 9.
